joined The Egremont Inn staff directly from Ansonia in Manhattan.
He has also worked with Michael Powers of California Cafe fame
and Pam Oddy at West Street Grill in Boston. A Culinary Institute
of America graduate, Jon finds unique challenge in perfecting
the delicate balance of refined preparation and creative presentation
of sophisticated country cuisine. With all preparations done
fresh at The Inn, Jon uses the most superior quality ingredients
to prepare some of the most outstanding food in the Berkshires.

From
the Union Square Cafe with Michael Romano in Manhattan to The
Harvest in Cambridge Massachusetts to Gramercy Tavern in New
York, Vanessa brings an exceptional palate, an innate sense of
textures and sensual presence to the menus offered at The Inn.
She has a natural gift for creating dishes of depth in both flavor
and textural interest. Vanessa is a CIA graduate who is wonderfully
successful in combining her Italian heritage with Continental
techniques to produce superb country dishes.
